22 minutesGolden edges, soft center. The way we bake them at home.

Preheat. Bake. Bliss.

  1. 1

    Preheat

Set the oven to 335°F. A touch lower than usual, so the cookie has time to spread and bake evenly.

  2. 2

    Bake

Frozen dough on the parchment sheet we include, a pinch of Maldon on top. No thawing. About 22 minutes.

  3. 3

    Bliss

Drop the tray on the counter, give them a few minutes, then break one open while the chocolate is still molten.

No thawing. No mixing. No bowl to wash.

Three things the bakery never tells you.

Watch the edges.

Pull the tray when the edges are set and golden. The middle will look badly underbaked. That is correct: it keeps cooking on the hot tray as it cools, and evens out.

Drop the tray.

When it comes out, lift the tray a couple of inches and let it fall flat on the counter. The cookies settle and flatten just enough.

Salt first.

Every pouch comes with a packet of Maldon sea salt. A pinch on each cookie before it goes in the oven, not after.

One pouch. Three ways to stock the freezer.

Every pouch holds six and reseals, so you can bake one tonight and the rest whenever.

Questions, answered.

Do I need to thaw the dough?

No. It goes straight from the freezer to the oven.

Can I bake just one?

Yes. That is the whole point of the resealable pouch.

How do I know they are done?

Go by the edges, not the middle. Set, golden edges mean pull them, even if the center looks underbaked. It finishes on the tray.

How long does the dough keep?

Keep it frozen in the resealed pouch and bake within three months for the best cookie.

Can I eat the dough raw?

Please don't. It is made with raw flour and eggs and is meant to be baked.

What about allergens?

Contains wheat, egg and milk. Made in a kitchen that may also handle nuts and other allergens.

Where do you deliver?

Inwood, Washington Heights, Harlem and the Upper West Side, every Sunday. Pickup is always free. More neighborhoods as routes fill.
